Okro Soup (Okra Soup) is one of the easiest Nigerian Soups you can whip up. With one taste the burst of flavors in this oil free version will definitely surprise you. You know you have won a jack pot when your five year old who hasn't finished eating her molded eba and she is already asking you if she can have some more.Then you tell her that it’s not a problem but to go ahead and finish the food in her plate First. And she goes like I love you mom.
Let's just say the age old saying 'the way to a man's heart is through his tommy' holds true but not only for men ? Okro is a versatile vegetable. It is mostly used to make soups in my part of the world. Though one of my aunties has a yam porridge recipe that she makes with okro. Like many soups in Africa, okro can be cooked in various ways.
Ingredients
- 500g Okra 🥬🥦
- 1kg Meat (Beef, Chicken, or Turkey) 🍖🍗
- 1 cup Palm Oil 🦞🍤
- 1 tablespoon Ground Crayfish
- 2 Stock Cubes 🍲
- Salt and Pepper to taste 🧂
- 1 Onion 🧅
- 3 Scotch Bonnet Peppers 🌶️
- 2 Bell Peppers 🥬
Directions
1. Wash and cut 🔪 the meat into small pieces.
2. Season the meat with salt, pepper, and one stock cube.
3. Add water 🌊 to the meat and cook until it is tender.
4. Blend the onions, scotch bonnet peppers, and bell peppers in a blender.
5. Heat 🔥 up the palm oil in a pot and add the blended mixture.
6. Fry the mixture for about 10 minutes until it is well cooked.
7. Add the ground crayfish 🍤 and one stock cube to the pot and stir.
8. Add the precooked meat to the pot and stir.
9. Wash and cut the okra into small pieces.
10. Add the okra to the pot and stir.
11. Cook for about 5 minutes ⏱️ until the okra is well cooked.
