DAY 1: NIGERIAN YAM PORRIDGE — ASARO
How to Make Nigerian Yam Porridge: Easy Asaro Recipe
INTRODUCTION
Yam porridge, popularly called asaro, is a comforting Nigerian one-pot meal. Yam cubes are cooked in a rich pepper mixture until tender and slightly creamy. Palm oil, crayfish, onions, and leafy vegetables give the dish its distinct Nigerian flavour.
Asaro is commonly prepared with white yam, pepper, tomatoes, onions, palm oil, and seasonings. Some recipes also include vegetables, smoked fish, or meat.
INGREDIENTS
🍠 1 medium white yam tuber
🫑3 red bell peppers
🌶️2 Scotch bonnet peppers
🍅 2 large tomatoes
🧅1 large onion
💧½ cup palm oil
🦐2 tablespoons ground crayfish
🐟1 smoked fish or cooked meat, optional
🫚 2 seasoning cubes
🧂 Salt to taste
💦3–4 cups water or stock
🍃A handful of chopped spinach or scent leaves
METHOD
1. 🔪Peel the yam, wash it thoroughly, and cut it into medium-sized chunks.
2. Blend the bell peppers, tomatoes, Scotch bonnet peppers, and half of the onion.
3. Pour the blended pepper mixture into a pot and cook for about 10 minutes.
4. Add the palm oil, crayfish, seasoning cubes, and salt.
5. Add the yam pieces and enough water or stock to almost cover them.
6. Cover the pot and cook over medium heat until the yam becomes tender.
7. Stir gently so the yam does not completely break apart.
8. Add smoked fish, cooked meat, or vegetables if using.
9. Cook for another 3–5 minutes and serve hot.
TIPS AND VARIATIONS
- For a creamier texture, mash a few yam pieces into the sauce.
- Palm oil gives asaro its traditional colour and flavour.
- Add ugu, spinach, or scent leaves shortly before turning off the heat.
- You can add beef, chicken, smoked fish, or dried prawns.
SERVING SUGGESTION
Serve asaro on its own or with chilled water, pap, or a simple side salad.
