So today we will start by talking about this Nigerian delicious meal you wouldn't want to miss out on.
Beans and yam is a hearty Nigerian combination that is filling, nutritious, and economical. In Igbo, the combination is often referred to as ji na agwa, and in Omoku Iji la egwa, meaning yam and beans.
The yam can be boiled separately and served with beans, or both ingredients can be cooked together in one pot. Palm oil, pepper, crayfish, and onions add flavour to the meal.
INGREDIENTS
- 🫛2 cups brown beans or black-eyed beans
- 🥔1 medium yam tuber
- 🫒½ cup palm oil
- 🧅2 large onions
- 🍅3 tomatoes
- 🌶️2 red bell peppers
- 🫑2 Scotch bonnet peppers
- 🦐2 tablespoons ground crayfish
- 🌿🧂2 seasoning cubes
- 🧂Salt to taste
- 💧Water as needed
METHOD
- Pick through the beans and remove stones or damaged beans.
- Wash the beans and place them in a pot.
- Add water and boil until the beans are tender.
- Peel and cut the yam into medium-sized cubes.
- Add the yam to the pot of cooked beans, adding more water if necessary.
- Blend the tomatoes, peppers, and one onion.
- Heat the palm oil in another pan.
- Add sliced onion and fry lightly.
- Add the blended pepper mixture and cook for 10 minutes.
- Pour the sauce into the beans and yam.
- Add crayfish, seasoning cubes, and salt.
- Cook for another 10 minutes until the mixture thickens.
- Serve hot.
TIPS AND VARIATIONS
- Soaking the beans before cooking can reduce cooking time.
- Add smoked fish, dried fish, or cooked meat for a richer meal.
- You can cook the beans and yam separately if you prefer firm yam pieces.
- Use less palm oil for a lighter version.
SERVING SUGGESTION
Serve with fried plantain, ripe avocado, or a small portion of fried pepper sauce.
